Princeton Cocktail

2/3 Dry Gin
1/3 Vino Porto Rosso
2 gocce di Orange Bitter
Strizzare la scorza di limone in superficie.

1 1/2 oz Dry Gin

Princeton Cocktail
A mixing-glass half-full fine ice, 
three dashes orange bitters, 
one and a half pony Tom gin.
Mix, strain into cocktail-glass; 
add half a pony port wine carefully 
and let it settle in bottom of cocktail before serving.

Guarnizione : scorza di limone

Tecnica di procedimento : (Stir and Strain) si prepara nel Mixing glass per poi essere filtrato con lo strainer nel bicchiere da cocktail.

Procedimento : raffreddare il bicchiere eliminando l’acqua prodotta in quest’ultima fase. Versare gli ingredienti , facendo attenzione che il ghiaccio sia cristallino ; mescolare e versare nella coppa.

Nel primo ricettario Iba del 1961 con una codifica:
Princeton
2/3 Dry Gin
1/3 Vino Porto Rosso
2 gocce di Orange Bitter
1 scorza di limone
Si prepara nel mixing-glass.
Coppetta da Cocktail.
Strizzare la scorza di limone in superficie.


Storia
Che negli anni i “Cocktails” abbiano contagiato ed affascinato le società di tutto il mondo è risaputo.
Ed è probabilmente che il “Princeton Cocktail” sia figlio di questa cultura.
Un "Cultura" del bere miscelato che veniva ispirata da più semplici coinvolgimenti.
Nomi dati dopo esperienze in qualche luogo; o nomi dati in onore di qualche Star del cinema.

Ed ecco che probabilmente in onore alla "Princeton University", una delle più prestigiose università del mondo che fu fondata nel lontano 1746 nello stato del New Jersey, fu creato questo drink.


1895 -"The San Francisco call"., August


La prima traccia del drink risale nel ricettario di George J. Kappeler, "Modern American Drinks"  datato 1895; una ricetta che vede come ingredienti del Old Tom Gin, del Porto e infine dell' orange bitter.
Una codifica che negli anni avrà delle mutazioni, non solo per la componentistica degli ingredienti ma anche per la preparazione del drink stesso.

Successivamente a questo ricettario, Jacques Straub nel suo libro "Straub's manual of mixed drinks." del 1913, proporrà una sua propria codifica.
Vedremo quindi la comparsa del seltzer e l'omissione del porto, allontanandoci così da quella originale che sarà presente sotto un altro nome "Union League Cocktail" : 1 dash orange bitters, 1/3 Jigger port wine, 2/3 Jigger Tom gin, stir well.
Sarà presente anche nel ricettario di Albert Stevens Crockett "The Old Waldorf-Astoria Bar Book" del 1934 con una unica differenza la presenza del Tom Gin dal semplice gin trovato nel ricettario del 1914.
Albert Stevens Crockett ci darà una breve notizia sul "Princeton Cocktail"; una notizia che renderà maggiormente concreto il legame del drink con l'Università di Princeton.

Nel ricettario di Harry Jerrold Gordon (Jerry Gordon) "Gordon's Cocktail and Food Recipes." del 1934 troveremo una successiva codifica che sarà presente in alcuni nuovi ricettari.

Ice.-Add Juice of 1/2 Lime.
Stir, strain and serve.

1 Port Wine
Orgeat Bitters, 3 Dashes
Ice.-Stir, strain. Add a Lemon Twist.

Un altra differenza negli anni sarà la preparazione.
In alcuni casi tutti gli ingredienti saranno miscelati insieme (Stir), mentre in un altra versione (vedi ricetta del 1895) Gin e Bitters saranno shakerati con ghiaccio per poi essere versati nel bicchiere.
Successivamente verrà versato il porto.

Come per altri drinks con nomi di Università come Cornell, Harvad, Yale anche questo cocktail viene nominato con il nome di una delle università americane "Princeton".

Princeton Cocktail
Named for the university, which was founded in 1746, an early version of a drink with this name calls for sweetened gin with orange bitters and club soda, and yet another calls for gin, port, and orange bitters. This recipe is the twenty first–century version.
1 1/2 ounces gin
1/2 ounce dry vermouth
1/2 ounce fresh lime juice
1/2 ounce simple syrup
Pour all of the ingredients into a shaker two-thirds full of ice cubes. Shake well. Strain into a chilled Cocktail glass.
